How to Measure Ingredients Like a Pro

Learn the secret to perfect recipes by mastering the art of measuring dry and liquid ingredients accurately. HowTo: Family Edition: family how-tos that actually help.

  1. Measure dry ingredients. Scoop the ingredient into the cup until it is overflowing. Use the flat edge of a knife to scrape across the top of the cup, pushing the extra ingredient back into the bag. This is called 'leveling' and it makes sure your measurement is exact.
  2. Measure liquid ingredients. Place your liquid measuring cup on a flat, level surface like a counter. Pour your liquid in slowly until it reaches the correct line. Bend down so your eyes are level with the measurement markings to make sure you have the right amount.
  3. Measure small amounts. When using measuring spoons for things like baking powder or vanilla, dip the spoon directly into the container. Just like with dry cups, use a flat edge to scrape off any extra so the spoon is perfectly level.
